Fennel and Grain Mustard Yukon Gold Potato Salad

8 cups Yukon Gold Potatoes [small diced &cooked-4min in salted boiling water]
1 cup Shallots [minced]
2 cups Fennel [diced]
½ cup Carrots [brunoise]
2 tbs Parsley [chopped]
1 tbs Fennel Seed [toasted and ground]
1 cup Mayo
4 oz Sherry Vinegar
4 tbs Pommeray Mustard
EVO
Salt & Pepper
Cook shallot, fennel and carrots in EVO. Cool.
Mix all ingredients. Season.
